Chia up muffins

We made our own almond meal today in the whiz bang Thermomix – love that bit – and you can do it in your food processor too. It’s much cheaper and fresher than buying store bought stuff. You can substitute apricots for any dried fruit, just watch out for the sweet factor.

Apricot, almond and chia muffins

1 cup g.f. flour
1 cup almond meal
1 cup apricots, diced + 1 cup hot water
2 tablespoons coconut oil, melted
1/3 whole nutmeg, grated
2 teaspoons cinnamon
½ cup coconut
1 tablespoon black chia seeds
½ teaspoon bicarb. soda
½ cup rice milk
Extra coconut oil for greasing muffin trays

  • Preheat oven to 180 C *see notes for timing
  • Combine GF flour and almond meal in a large bowl
  • Place diced apricots in a smaller bowl, cover with hot water and allow to stand for 10 minutes – set aside
  • Add remaining ingredients to the flour mixture
  • Add soaked apricots and soaking water and mix well
  • Spoon mixture into a greased muffin tray or silicon muffin mould
  • Bake as instructed below

Oven

Rational or fan forced
Bake at 180 C for 20 minutes

Conventional:
Bake at 180 C for 30 minutes

Makes 12 mini muffins
