Rockin’ Women Wednesdays – Jennie Murphy

Jennie Murphy is a pioneer in the world of raw food. Her thriving business Raw Pleasure is Australia’s leading online one stop shop – and the ultimate go to for gadgets, ingredients and living cuisine guidebooks. For those new to raw, a far diet or Living Cuisine as I prefer to call it, consists of predominantly raw foods and some foods that have been cooked at or below 45C. According to raw foodists, cooking destroys enzymes that they believe are essential to human health.

Depending on the exact philosophy or type of lifestyle and results desired, raw food diets may include a selection of fruits, vegetables, nuts, seeds, eggs, fish, meat and dairy products. It may also include simply processed foods such as various types of sprouted seeds, cheese, and fermented foods such as yoghurts, kefir, kombucha or sauerkraut, but generally not foods that have been pasteurized,homogenized, or produced with the use of synthetic pesticides, chemical fertilizers, industrial solvents or chemical food additives. Meet Jennie.

I have always had a love of food. My mother never had any trouble feeding me my vegetables and salads at all and I’m sure she would be grateful for this! As I became an adult I started to really enjoy cooking and inevitably started to gain a lot of weight. This lead to my trying all sorts of different eating styles. In late 2006 I discovered a Raw Food way of living and fell in love with it. For a while I was eating an all raw vegan diet, but found I didn’t really enjoy it. So these days I eat mostly raw vegan foods with a mixture of cooked vegetables, beans and sometimes rice. I’m not vegan because I occasionally eat eggs or fish which surprises a lot of people. Most people assume I’m vegan. My ‘favourite’ food changes with the weather. At the moment I’m enjoying light and savoury foods and I’ve been eating this grain free, raw sushi a couple of times a week at least for the last month or so.

Along with my husband I run our business Raw Pleasure which has been established for eleven years now! We took over the running of this business in 2007 and have been very happy doing this. We’ve been able to help thousands of people improve their diet and lifestyle with our free ebook and newsletters as well as the products in our store. We have two children and two cats and a dog who is the latest edition to our family.

A few questions for Jennie.

1. What’s your survival food when you’re on tour, travelling or working late in your business?

Smoothies. Hands down. We take a blender with us when we travel and just make smoothies wherever we go because they’re easy and we can make any size we want to really.

2. What’s your healthy go-to comfort food – either at home or in a restaurant?
Oh I have so many! My favourite raw comfort food would be bliss balls. They’re so quick and easy to make and if I’m in dire need of comfort I can whizz them up and eat straight from the bowl with a spoon. My favourite cooked comfort food is mashed potatoes made with coconut cream, cumin and Celtic Sea salt.

I’d like to point out that I don’t eat those things all of the time. I prefer lighter smoothies and large, but light salads most of the time. Yum!

3. Do you have a secret remedy that keeps either your mind and body in shape?

This changes a lot. Sometimes it’s time with friends, other times it’s time alone. I don’t really have one ongoing ‘thing’ outside of food that keeps me going. At the moment I like to put on my earphones in the morning and go for long walks with our dog around a lake that we live near. I listen to amazing podcasts as I go and being near the water feels good. Also watching the joy that my dog experiences while we walk gives me a lift as well.

My mind is incredibly busy… always thinking about 50 things at once which can make getting to sleep quite difficult. A year or two ago I watched a documentary about Vipassana which talked about meditating by concentrating on the area between the top lip and the nose. I use this method to get to sleep and it almost always works. I relish time alone but like many in today’s society that doesn’t happen anywhere near as often as I’d like. Occasionally my family will go away for a weekend and I turn off all of the phones and the internet and just ‘be’ for a couple of days. It’s great!

The Best Raw Sushi Recipe Ever!

  • Raw Nori Sheets

Raw Rice
1/2 a small cauliflower
1 tablespoon ground flax or ground chia
1 teaspoon apple cider vinegar
Juice from half a lemon
Celtic or Kalahari Salt
Fresh ginger, peeled

Filling Options

  • Shredded carrot
  • Cucumber sticks
  • Avocado
  • Lettuce or other shredded greens
  • Capsicum, very thinly sliced 
  • Shredded beetroot
  • Finely sliced red onion rings
  • Asparagus cut into quarters lengthwise
  • Corn kernels

Method

Rice

Place all of your rice ingredients into your food processor and process using the S blade until it reaches a breadcrumb like consistency.

Assembly
Lay out 1 nori sheet onto a sushi rolling mat. Cover with a thin layer of the cauli ‘rice’. This layer only needs to be around 2mm-3mm thick. You’ll need to leave the last 2-4cm of nori sheet bare.

Next add a layer of your fillings of choice. In this photo we’ve used lettuce, carrot, avocado and cucumber.sushi 2

Then use your sushi mat to roll the sushi into a tight roll. We like to lightly wet the uncovered area of the nori sheet first to help it stay sealed. Just dip your finger in a little water, then run along the edge.sushi 3

Finally cut the roll into little rings and serve on a platter with your sauce of choice.sushi 4

Depending on the size of your cauliflower this should be enough for three nori sheets. Multiply as needed! If you have any other filling ideas you’d like added to the list below that are both raw and vegan, please feel free to contact us and let us know!

Hints and tips! 

  • Try to spread the rice mixture so that it doesn’t quite meet the edges of the nori as it will spread when you roll it
  • When you place your fillings onto your rice mixture, we recommend having an inch of space between you and your fillings so that you have something you’re able to lay over them. It makes it much easier to roll!
  • If you’re not confident using a sushi mat and presentation is important, you can also use the Sushezi to roll your sushi perfectly
