Smoked trout salad with turmeric cashew dressing      

On a freezing Melbourne winter’s morning I popped into town to do a quick demo for GCBC, here’s what we prepared earlier.

Smoked trout salad with turmeric cashew dressing             Serves: 4  Prep: 30 minutes

For the salad

300 grams smoked trout, bones removed, shredded
100 grams assorted tomatoes, quartered
¼ cup macadamias, roughly chopped
½ butter lettuce, torn
½ cup watercress
1 teaspoon capers
Freshly ground black pepper

  • Combine all ingredients in a large bowl

Turmeric dressing
½ cup raw cashews, soaked at least 1 hour
I lime, juice of
¾ cup macadamia oil
¼ cup apple cider vinegar
1 teaspoon maple syrup
1 clove garlic, peeled
1 piece ginger, peeled
1 teaspoon ground turmeric
Pinch salt

  • Blend well, spoon over salad and toss well.
