
Here’s a fun, back of the fridge fried rice. Perfect for when you reckon there’s nothing to cook. Hit the jackpot in times of need with this bowl of goodness. Ingredients below are just a guide, it’s all I had in my #covid fridge today.
Heat your favourite skillet, much loved wok or any ol’ pan, add the oil. I use Brookfarm always. Next fry off the spring onions, garlic and ginger. Then add the bacon or Jamon, cook until translucent. Add the peas. Don’t forget them ‘cos they’re my favourite. You can throw frozen peas straight in, they’ll defrost safely. Now transfer all of that to an empty bowl – keep it warm.
In the same tasty pan, add the day old rice and heat it really, really well – this is so important, otherwise you’ll be sicker than a Schoolie on Day 2 due to a bacterial infection called bacillus. Now return the warm aromatics and meat mix to the pan, stir fry then add the soy. Serve into a bowl or two – that’s if you feel like sharing – and add some coriander and hot chilli if you like it. I do.
