Description

Black Betty Bam Potatoes

Ingredients

Scale

4 potatoes, peeled end washed
2 tablespoons extra-virgin olive oil
2 tablespoons butter, melted
1.5 tablespoons Black Betty Bam
Salt and pepper
Fresh parsley


Instructions

  1. Dice the potatoes into chunks.
  2. Add the potatoes to a pot of boiling water with a pinch of salt and allow to boil for 10 minutes.
  3. Drain the potatoes and gently roughen them up with a fork, then add the melted butter and gently toss.
  4. Place the potatoes in a baking dish and brush a thin film of Black Betty Bam over them and bake at 200°C for approximately 45 minutes, or until brown and crispy; occasionally rotating the potatoes  
  5. Season with salt, pepper and fresh parsley.
