Brookfarm Cranberry Macadamia Banana Loaf

Description

This banana loaf is another versatile way to integrate the goodness that comes in every bite of Brookfarm.


Ingredients

Units Scale

1/2 cup butter, softened
1 cup light brown sugar 13/4 cups flour
1 teaspoon baking powder 1/2 teaspoon salt
3/4 cup + 1 tablespoon for topping Toasted Cranberry Macadamia Muesli
1/4 cup macadamia nuts, chopped
3 bananas, 2 mashed, 1 cut in half lengthways for toping
2 eggs, beaten


Instructions

  1. Preheat oven to 175 C.
  2. Grease and line a loaf pan with baking paper.
  3. In a bowl cream butter and sugar.
  4. In a separate bowl sieve flour, baking powder and salt.
  5. Blend dry ingredients with creamed butter/sugar mixture.
  6. Fold in Toasted Cranberry Macadamia Muesli.
  7. Add mashed bananas, eggs and nuts.
  8. Pour into prepared loaf pan.
  9. Place lengthways sliced banana and a sprinkle of Toasted Cranberry Macadamia Muesli on top.
  10. Bake for 45-60 mins until a test skewer comes out clean.
