Cauliflower, cashew crunch

This crunchy winter warming bake is quick and easy and can be put together very quickly with existing pantry items. Substitute cashews for almonds if preferred. You can also dry bake with no oil at all if using baking paper – I guarantee you will be pleasantly surprised with the flavour! Alternatively, you could add a little  yoghurt, crumbled fetta or grated Parmesan to serve.

3 cups cauliflower florets
1/2 cup raw cashews, roughly chopped
1 teaspoon cumin seeds
Pinch cayenne pepper
1 dessertspoon fresh thyme leaves (or 1 teaspoon dried)
1 dessertspoon extra virgin olive oil

  • Preheat oven to 170 C.
  • In a ceramic or glass baking dish, scatter cauliflower the cashews.
  • Sprinkle with cumin seeds and cayenne pepper – more if you like it spicy.
  • Drizzle with olive oil and bake for about 20 minutes.
