Consorcio Jamon Serrano, manchego and baked figs

8 slices Consorcio Jamon Serrano
2 figs, trimmed, quartered
100g manchego cheese, shaved
1 lime, juice of
1 tsp chopped fresh herbs
1. Preheat oven to 180 C.
2. Gently wrap figs with Jamon Serrano, add shaved manchego and bake for about 8-10 minutes until manchego melted.
3. Serve with a squeeze of lime and freshly chopped or picked herbs.
