Golden turmeric chicken

Here’s a super quick lunch or dinner with a golden hue of goodness. You can also try using prawns or beef strips. Add garlic and ginger if you like. Working from home has its benefits, but it also means that you’re much closer to the fridge. Here’s a quick lunch you can throw together easily, just add Konjac noodles if you need more substance.

Konjac is a plant native to Southeast Asia. It’s known for its starchy corm (the modified stem of the plant), which is a tuber-like part of the underground stem containing glucomannan, a water-soluble dietary fibre. People extract glucomannan from konjac to create a gel-like substance with very few calories and carbohydrates.

Konjac has become popular as a food ingredient and it’s commonly used to make konjac flour, konjac noodles and other konjac-based products. Konjac noodles, also known as shirataki noodles, are a common choice for those following low-carb or gluten-free diets, as they offer a low-calorie alternative to traditional wheat-based noodles in various Asian dishes.

In addition to its culinary uses, konjac has been employed in traditional Chinese and Japanese medicine for its potential health benefits. Some believe it may assist in weight loss, blood sugar control, and cholesterol management.

Ingredients

Scale

100 g chicken strips

60 g celery, finely sliced

25 g kale, shredded

100 g Chinese cabbage, shredded

1/2 tsp coriander, chopped

1/2 tsp parsley, chopped

1/2 lime, juice only

Salt & pepper

1 tbsp Goddess dressing (recipe below)


Instructions

  1. In a non-stick wok, heat 1 tablespoon of the Golden Goodness, add chicken strips, and stir fry for a few minutes on a moderate heat until chicken is cooked through.
  2. Add celery, kale and Chinese cabbage. Stir fry until wilted.
  3. Transfer to a serving plate and add coriander, parsley and a squeeze or fresh lime.

Golden Goddess dressing & marinade

Description

This golden sauce is the basis for so many recipes. It works as a dressing, a marinade and a sauce. This makes about 1 cup, so store for later as required, you’ll only need about 1-2 tablespoons.


Ingredients

Scale

20 g fresh turmeric, minced

175 ml apple cider vinegar

40 ml tamari

10 g ginger, minced

1/2 tsp chilli flakes or cayenne

1/2 tsp ground turmeric


Instructions

  1. Place all ingredients in a high-speed blender. Process until smooth and foaming.
  2. Transfer to a glass bottle, jug or jar. Seal well and store in the fridge for up to 5 days.
