
On a freezing Melbourne winter’s morning I popped into town to do a quick demo for GCBC, here’s what we prepared earlier.

Good Chef Bad Chef Smoked trout salad with turmeric cashew dressing
- Total Time: 30 minutes
- Yield: Serves: 4
Ingredients
For the salad
300 grams smoked trout, bones removed, shredded
100 grams assorted tomatoes, quartered
1/4 cup macadamias, roughly chopped
1/2 butter lettuce, torn
1/2 cup watercress
1 teaspoon capers
Cracked black pepper
Turmeric dressing
1/2 cup raw cashews, soaked at least 1 hour
I lime, juice of
3/4 cup macadamia oil
1/4 cup apple cider vinegar
1 teaspoon maple syrup
1 clove garlic, peeled
1 piece ginger, peeled
1 teaspoon ground turmeric
Pinch salt
Instructions
For the salad
- Combine all ingredients in a large bowl
Turmeric dressing
- Blend well, spoon over salad and toss well.
- Prep Time: 30 minutes
Freek Out! Trout, beluga lentil, freekeh, horseradish dressing
