Everyone seems to love a green smoothie these days. Years ago all we had was a banana vibe but now it’s supergreen kale to the rescue and anything else you can get your hands on. This recipe has been formally published in the brand spanking new Byron Bay Cookbook launched this week. The gorgeous pic is by Nelly Le Comte.
1 young green Thai coconut, water and flesh
½ bunch organic kale or spinach, washed, trimmed (lightly steamed if using kale)
1 organic green apple, quartered, seeds
½ cup organic mint leaves, chopped
1 tablespoon vanilla rice protein powder
1 teaspoon mesquite powder
1 teaspoon E3LIve micro green algae
- Open the young coconut carefully with a cleaver
- Strain the water through a sieve and scoop out the flesh with a spoon
- Place coconut flesh and coconut in a Vitamix RawBlend together with green leaves, apple, mint, protein powder, mesquite and E3Live
- Blend at full speed until velvety smooth. Serve immediately
