Healthtalks TV – The Beauty of the Beets

We had an absolute ball shooting this episode of Healthtalks TV in Melbourne.  This uplifting recipe is inspired by a Middle Eastern version from Dani Valent’s Thermomix book called In the Mix that you can buy here.

Sam and Mel talk up the Beauty of the Beets

Beetroot, pepita, rosewater and pomegranate salad   Serves 8

*Please note, this recipe works best if you use a Thermomix machine to get the right consistency.

3 large beetroot
2 tablespoons olive oil
2 teaspoons rosewater
juice of 1 lemon
1 dessertspoon chives, snipped
1 dessertspoon mint
1 dessertspoon parsley
2 tablespoons activated pepitas
1 small pomegranate, seeds only
Pinch Murray river salt
Cracked pepper to taste

  • Put all the ingredients, except pepitas and pomegranate seeds, into the TM bowl
  • Chop for 2 seconds/speed 5. Scrape down. Chop for another 2 seconds/speed 5
  • Tip into a salad bowl and scatter over the pistachios and pomegranate seeds
