Cauliflower couscous with macadamia nuts and cranberries

Ingredients

Units Scale

1/2 head cauliflower, roughly chopped
1 cup macadamia nuts
1/2 cup parsley, finely chopped
1/2 cup mint, finely chopped
1/2 cup dried cranberries


Dressing
2 lemons, juice of 2, zest of 1
1/3 cup macadamia nut oil
Pinch turmeric
Pinch salt


Instructions

  1. Place cauliflower in a food processor and blitz until it resembles breadcrumbs
  2. Transfer to a mixing bowl and add remaining ingredients
  3. Combine dressing ingredients and toss through gently
