How to make turmeric cashew dressing

 


This dressing can double up as a dip if you make it thicker. It goes with everything from crisp salads to grilled and baked vegetables, or as a snack with crackers.

Turmeric Cashew Dressing

Ingredients

Units Scale

1/2 cup raw cashews, soaked for 30 minutes, drained
1 lime, juice of
3/4 cup macadamia nut oil or olive oil
1/4 cup apple cider vinegar
1 clove garlic, peeled
2 cm piece ginger, peeled
1 teaspoon ground turmeric
1 teaspoon maple syrup
Pinch salt
Water to blend if required


Instructions

  1. Place all ingredients in a high-speed blender and blend until ultra-smooth and creamy.
  2. Add more water if required for preferred consistency.
  3. Transfer to a sterilised glass jar, seal with a lid and refrigerate for up to 5 days.
