Jamon and pear salad

6 slices Jamon Serrano

1 ripe pear, sliced in half, sliced thin wedges, pips, stem discarded

2 cups mixed leaves, washed and patted dry

½ lemon, juice of

Sprigs of micro herbs to garnish

Salad dressing
1 Tbsp extra virgin olive oil

1 Tbsp balsamic vinegar

½ lemon, juice of

½ tsp Dijon mustard

¼ tsp salt


  1. Place sliced pears in a salad bowl. Drizzle with lemon juice to prevent discolouration.
  2. Add jamon and mixed leaves, toss gently to combine.
  3. Whisk dressing ingredients together in a small bowl or shake together in a jar.
  4. Pour over salad or serve on the side.
