Jamón Serrano fried rice

Ingredients

Scale

1 tablespoon macadamia oil

1 clove garlic, roughly chopped

½ small onion, minced

46 slices Jamón Serrano, torn

2 cups cooked long-grain white rice (best when cooked the day before)

1 teaspoon Chinese five spice

¼ cup peas

¼ cup corn kernels

1 cup bean shoots

1 spring onions, finely sliced diagonally

Dash of Shao Xing (Chinese rice wine) or dry sherry

1 tablespoon tamari or soy sauce


Instructions

  1. Heat macadamia oil in a wok over a medium-high heat. Add garlic and onion and sauté until translucent, about 1 minute.
  2. Add Jamón Serrano and sauté for about 1 minute. Add cooked rice and the Chinese five spice and continue to stir fry, breaking the rice up with spoon so each grain of rice is separated and absorbs more flavour.
  3. Add peas to wok and cook through. Add bean shoots, spring onions, and then add a dash of Shao Xing or dry sherry. Stir fry to warm through, then add tamari or soy sauce, tossing well to heat through and then serve immediately on a platter or in individual bowls.
