These healthy muesli bars are handy snacks or a great breakfast on the run. They’re packed full of fibre, wholegrains and seeds – the perfect grab ‘n’ go anywhere, anytime.

Makes 16
1 teaspoon coconut oil, melted
1 cup rolled flakes – oats or rolled quinoa (gluten free)
1 cup desiccated coconut
½ cup white sesame seeds
½ cup sunflower seeds
½ cup pepitas
1 cup sultanas
1 cup dried apricots, diced
125g organic coconut butter
½ cup organic maple syrup
1/3 cup coconut sugar
- In a 16cm x 28 cm baking pan, brush with melted coconut oil then line with baking paper
- In a large heavy based frying pan, dry roast the oats, coconut and sesame seeds, in a frying pan and gently toss through over a low heat until lightly golden – about 7 minutes
- Transfer to a bowl and allow to cool, then stir through the sunflower seeds, pumpkin seeds, sultanas and apricots
- In a small saucepan melt coconut butter gently over medium heat. Add maple syrup, coconut and stir gently to combine for about 4 minutes or until sugar has dissolved
- Bring the mixture to the boil, reduce the heat and simmer for up to 7 minutes until it forms a caramel like syrup. (You can test if it’s ready by dropping a small amount into iced water so it forms a soft ball)
- When ready, add to dry ingredients. Stir until combined well and transfer to the lined baking tray. Press mixture firmly and evenly into the tray
- Once cool and set, cut into muesli bars. Wrap individually in baking paper and tie with string or store in a foil-lined airtight container for up to 7 days
