This fragrant Thai style chicken dish is super quick and very satisfying. be sure to buy organic chicken if you can. If not, then at least mince your own chicken breast. Add Konjac noodles at the end and toss through to warm, if desired.

Yields: 1 serve
100 gorganic chicken breast, roughly chopped
1 garlic clove, peeled, roughly chopped
1 tspginger, peeled, roughly chopped
1 long red chilli, roughly chopped
2 tspapple cider vinegar
1 celery stalk, chopped
1/4 cupassorted sprouts
1/4 cupbasil leaves, finely torn
1In a food processor, mince garlic, ginger and chilli. Add chicken. Process until finely minced.
2In a non-stick wok, heat apple cider vinegar over a moderate heat.
3Add celery and minced chicken mixture and stir-fry for a few minutes until cooked through.
4Add sprouts, basil season with tamari, pepper and extra basil and chilli as desired.
