Healthy steamed orange roughy with fennel & orange. Once the poster fish for unsustainable fishing in Australia it's is back on the green list and might just be the most delicate fish you'll ever eat.

Also known as slimehead, deep sea perch, red roughy, range rough are a deepwater species that inhabits waters over steep continental slopes and ocean ridges. They are usually found dispersed over rough bottoms and steeps at depths of 700-1400 metres. AFMA


10 g shaved fennel

2 g garlic, minced

100 g orange roughy (or bream or whiting)

5 g orange, peeled, sliced

30 g Asparagus spears, sliced in half lengthways, halved

Pinch salt

Pinch Mixed pepper - pink, black, Sechuan


1Arrange shaved fennel and garlic in the bottom of a steamer basket. Place fish on top of fennel.

2Season with salt and pepper. Place steamer in a saucepan, add asparagus.

3Cover and simmer gently until fish begins to flake when tested with a fork - about 4 to 6 minutes.

4Carefully transfer fish and vegetables to a serving bowl. Season if required and serve.
