Peanut Butter Anzacs

These almost-Anzac biscuits are enhanced with the goodness of Byron Bay Peanut Butter. Add a tablespoon of my Black Betty Bam for a smoky umami flavour bomb. Oh my giddy Aunt, they’re sensational!

  • Yields: 16-20 biscuits


1 cup oats

1 cup wholemeal flour

1/2 cup coconut sugar

1 tsp baking powder

1 pinch salt

100 g butter, melted

1 tbsp golden syrup

2 tbsp Byron Bay Peanut Butter - or your fave


1Preheat oven to 150 C. No fan.

2In a large mixing bowl combine oats, flour, sugar, baking powder and salt.

3Add melted butter, golden syrup and peanut butter. Mix well, add more golden syrup of required.

4Roll into golf ball size balls, press down with a fork.

5Bake for 10 minutes. Transfer to a wire rack to cool and harden as they will be soft when hot.
