Consorcio Jamon Serrano with chicken, rocket, lime

4 chicken breasts, skin off
4 large slices Consorcio Serrano
2 limes, halved
2 cups rocket leaves, washed and dried
2 teaspoons olive oil
Edible flowers
Cracked black pepper


  1. Preheat oven to 180 C.
  2. Line a baking tray with baking paper.
  3. Wrap Consorcio Serrano around each chicken breast.
  4. Bake for around 15 minutes pending on size.
  5. Allow to rest for a few minutes.
  6. Meanwhile toss rocket leaves in olive oil.
  7. Arrange a mound of rocket on each serving plate.
  8. Garnish with edible flower petals.
  9. Slice chicken breast and transfer to serving plates.
  10. Serve with a squeeze of lime and freshly cracked black pepper.
